The name means “sour cabbage”. The dish acquires its tangy taste through fermentation.

Why it’s healthy?

Sauerkraut is rich in vitamin C and like other fermented foods, is a good source of gut-friendly bacteria when eaten raw.

How do we eat it?

It’s great plied high on bratwurst, simmered in beer with sausage, served alongside spare ribs or even scattered on a pizza.
